RECIPE: Black Bean Brownies
Black Bean Brownies
Ingredients
- 16 ounces black beans, cooked
- 1 serving vegan chocolate protein powder ( I used vega)
- 2 tbsp cacao
- 2 flax eggs ( 1 tbsp ground flax seeds +3 tbsp water= 1 flax egg
- 1 tsp baking powder
- Pinch of salt
- Splash milk
- ½ cup vegan chocolate chips
- ¼-½ cup coconut sugar ( varies based on protein powder)
- 1 tsp vanilla extract
- ½ tsp cinnamon powder
- ¼ cup apple sauce
Directions
- Heat oven to 350 degrees. Puree black beans in a blender or food processor. Add to bowl with wet ingredients flax eggs, Apple sauce, milk, and vanilla extract.
- In a separate bowl mix dry ingredients, protein powder, cinnamon powder, sugar, baking powder, and salt.
- Add dry mixture into wet ingredients. Fold in chocolate chips.
- Place in well-greased 8" x 8" baking dish. Bake for 30 to 40 minutes. Allow to completely cool.
