RECIPE: Black Bean Brownies

Black Bean Brownies

Ingredients

  • 16 ounces black beans, cooked
  • 1 serving vegan chocolate protein powder (  I used vega)
  • 2 tbsp cacao 
  • 2 flax eggs ( 1 tbsp ground flax seeds +3 tbsp water= 1 flax egg
  • 1 tsp baking powder
  • Pinch of salt
  • Splash milk
  • ½ cup vegan chocolate chips
  • ¼-½ cup coconut sugar ( varies based on protein powder)
  • 1 tsp vanilla extract
  • ½ tsp cinnamon powder
  • ¼ cup apple sauce

Directions

  1. Heat oven to 350 degrees. Puree black beans in a blender or food processor. Add to bowl with wet ingredients flax eggs, Apple sauce, milk, and vanilla extract. 
  2. In a separate bowl mix dry ingredients, protein powder, cinnamon powder, sugar, baking powder, and salt. 
  3. Add dry mixture into wet ingredients. Fold in chocolate chips. 
  4. Place in well-greased  8" x 8" baking dish. Bake for 30 to 40 minutes. Allow to completely cool.
