RECIPE: Mighty Kale Salad
Mighty Kale Salad
Ingredients
- 1 Bunch of Kale torn
- 1 C chickpeas, cooked or sprouted
- 2 carrots grated
- 1 avocado
- 1.5 cups tomato, chopped
- ¼ cup pumpkin seeds
- ¼ cup hemp seeds
- 3-4 tbsp nutritional yeast
- 1-2 tbsp balsamic vinegar*
- 1 tbsp cup olive oil
- ¼ cup red onions
- Himalayan sea salt to taste
- Cayenne to taste (optional)
- ½ tbsp agave (optional)
Add kale in a bowl with 1/2 teaspoon of Himalayan sea salt and 1 tablespoon of oil. Massage the kale until it's dark green. Add nutritional yeast. Mix in the following ingredients avocado carrots, hemp seeds, pumpkin seeds, chickpeas, and tomato. Add balsamic vinegar. Add Himalayan sea salt and cayenne to taste.
*Substitute with Lemon or Apple Cider Vinegar
