Vegan Sweet Potato Pie


Ingredients

  • 1 cup baked sweet potato
  • ½ cup plant-based milk
  • 1 tsp pumpkin spice
  • 2 chia or flax eggs ( 2 tbsp of ingredient+  6 tbsp water let sit for 20 minutes_
  • ¼-½ cup coconut sugar
  • 2 tbsp psyllium husk
  • 1 tsp vanilla essence
  • ¼ tsp salt
  • 1 pie crust


Directions: Heat oven to 350 degrees.  Place all ingredients in a high blender. Blend ingredients until smooth. Pour into the pie crust. Bake for 35-45 minutes. Let cool for 20 minutes then serve.
