RECIPE: Vegan Quesadilla

Vegan Quesadilla

Ingredients

  • 2 C black beans
  • 1 C corn
  • ½ red onion
  • 1 cup mixed sweet peppers
  • ½ cup hummus
  • 1 cup vegan mozzarella 
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ chili powder
  • Salt to taste
  • 6 Tortillas 

Cilantro Sauce

  • 1 Hass avocado
  • 3 tbsp vegan mayo
  • ¼ cup cilantro
  • Juice of 1 lime
  • 1 clove of garlic
  • ⅛  cup water + more
  • Salt to taste

Instructions

  • Add one tablespoon oil in a medium pan over medium-high heat. Add the mixed peppers,  onion, and cook for 3-5 minutes. Add black beans, corn, and seasoning. Cook for an additional 3-4 minutes. Season with salt and pepper. Turn off heat and stir in the cilantro.
  • In a skillet over medium heat, add a flour tortilla. Top with hummus vegan cheese, cooked veggies mixture, and another layer of cheese. Place another tortilla cover with hummus on top and cook, flipping once, until golden on both sides, about 3 minutes per side. Repeat with the remaining ingredients. Slice and Serve with avocado cilantro sauce.
  • Make the avocado cilantro sauce. Add all ingredients to a blender. Blend until combined and creamy.
